🍚🍚 Food is such a huge part of any culture and one of the best ways to share your background with a loved one is to cook for them. I do the same thing. At home, my husband and I usually cook our own styles and cuisines from our upbringing but every once in a while, I would whip up a delicious dish for him that also reminds me of home. For example, my husband loves loves instant noodles and befriends maruchan even more than I do. I made him Vietnamese Crispy Pan Fried Noodles, or Mì Xào Giòn. This is a flavor-loaded stir fry topped with juicy beef, some seafood, and a delicious blend of flavorful vegetables. A sweet, savory, and tangy brown sauce glosses over a crispy "bird's nest" shape of noodles for a hearty delightful meal. To get the crispy fancy texture from the noodles, I would opt for the Hong Kong style pan-fried noodles easily found at your local Asian grocery store.

First, bring a large pot of water to a boil and lightly salt it to taste. Add the Hong Kong noodles or chow mein noodles then drain and lay the noodles onto a surface in your desired shape (circle for example) Prep all your vegetables and protein like shrimp or beef or chicken. Make the sauce by whisking together sugar, soy sauce, Shaoxing wine, oyster sauce, salt and pepper. Mix well a tablespoon of the sauce to the thinly sliced protein, along with the baking soda, and let marinate. Then add cornstarch to the remainder of the sauce. Pan fry the noodles! Pour ¼ cup oil to a large skillet. I used a Nonstick Ceramic Frying Pan Skillet. Guys, if you care about health and safety while cooking as much as I do, I highly recommend a healthy ceramic skillet that is made of natural ceramic like this one. No toxic substances will be produced even overheated. No coating to come off into your food and super nonstick too! Slide the dried noodles from the plate into the skillet. It should sizzle instantly. Shape the noodles into a circle and swirl the pan to evenly coat the bottom of the noodles with oil. Let pan fry for 8-10 minutes over medium-high heat. Repeat the pan-frying method with the second side, swirling it for 4-6 more minutes or until crispy. Then slide the noodles onto a clean plate. You can line it with paper towels to drain excess any oil if you'd like. One hot tip for reheating this dish is to warm the sauce mixture in a microwave in 30 second intervals until hot. Please keep in mind that the noodles can be microwaved but they will lose their crisp texture. As a better method, you can reheat it in a skillet over medium heat, covered, for a few minutes. (At home I have a whole set of Cuisinel Cast Iron Skillets . This has all the basic sizes that I need for cooking, frying, baking, grilling, sautéing and comes with silicone handle grip covers) Alternatively, toasting or air frying them in an air fryer will regain some crunch, which is my personal favorite method. This food is basically me on a dish and reminds me so much of home whenever I tasted it.
